Summer in Ahrntal

If you take a look out of the window, you already have the farm Künighof in view. The farm takes part of Bioland and was converted to organic farming in 2003 and represents sustainable and healthy agriculture. The farm keeps dairy cows of the Grauvieh breed, a breed suitable for grazing, which graze on the farm's own land from mid-April to the end of October.  Due to the grazing, no external feed is needed, only hay is fed (especially in winter) and no concentrated feed is used at all.


We use the products from this farm in our kitchen.


Walter Steger has also recently become president of Bioland Südtirol.


We have been sourcing our natural yoghurt directly from the Bioland Oberleiterhof farm in St. Peter/S. Pietro since 2023. The farmer Monica, who runs the Tauernalm in Kasern with her daughters in summer, ensures that we are well supplied with her creamy yoghurt. The curd cheese/ricotta is also delivered to us fresher than fresh, and in the summer months we can enjoy her typical Ahrntal „Grey Cheese“ („Graukäse“ - Presidio Slowfood), which is one of the best in the valley. We particularly enjoy this co-operation.

THE HEN FARMpfeilchen

We source our eggs from the Mairhof farm in Mühlen in Taufers/Molini di Tures - organic eggs from hens that feel visibly well. They live there under fully organic conditions and are fed only the best organic feed without chemical pesticides. Some of it is even grown on site. Cereals and potatoes grow in the nearby fields. The egg is a primary product. At the Mairhof, we make sure that it stays that way. Nothing is changed, nothing is manipulated, nothing is influenced. An organic egg is a valuable product, and we treat it as such.

Biokistl Südtirolpfeilchen

Our partner and supplier is a community of South Tyrolean organic farmers who have been marketing their products together for over 18 years. Around twenty-five local farmers, as well as selected farmers from other regions of Italy, provide the large range of fruit and vegetables. About thirty other regional producers expand the range with their additional products. The Biokistl stands for quality, consistent organic cultivation and sustainable business practices.

Profanter Bakerypfeilchen

Natural bread - genuine, honest and unadulterated. The master bakers at Profanter Natur-Backstube bake their organic bread specialities fresh every day according to this credo. Without pre-mixes and ready-mixes, without artificial baking agents, without chemicals in the dough, but with a lot of love, time, natural ingredients, unique pre-doughs and the famous in-house natural sourdough.


The Natur-Backstube is South Tyrol's first purely organic bakery and has been grinding the wholemeal flour used in its own mill since 1983. Natural, but above all regional raw materials are used for bread & pastries: For years, the master bakers Profanter have been the largest user of South Tyrolean grain. In addition to the traditional artisan production methods and the old house recipes, the only natural stone ovens in the region give the bread its unique taste - for a carefree bread enjoyment.


What would a hotel in South Tyrol be without a perfect espresso? Thanks to Caroma Coffee Roaster’s expertise, we offer our guests more than just the Italian coffee classics. Caroma is our coffee sommelier and master roaster of choice, who travels far to supply us with superior coffee beans.

Moessmer Fabrics produce fine cloths based on a sustainable use of resources. They are experts for loden fabrics, which is why we buy all our loden materials from them. But we’re not their only clients. Moessmer is actually the oldest manufacturing company in the Pustertal Valley and supplies several famous fashion labels with their fabrics.

La Pedevillapfeilchen

La Pedevilla is a modern refuge built high up in the Dolomite Mountains. It was designed to be carefully integrated into its surroundings by Pedevilla Architects. La Pedevilla has served as a source of inspiration for the reconstruction of Bühelwirt. The building opens up to the valley and provides a breath-taking panoramic view of the mountains. The interior is very light. Only local materials were used for the interior design. La Pedevilla is managed with love and dedication by Caroline Willeit, Armin Pedevilla’s partner.
